The coffee bean, Kapeng Barako, is a rare variation of the Liberica species with big cherries and an unusual flavour. It has been a cultural staple in the Philippines for over 200 years, and is well-loved by many Filipino locals for it invokes memories of their parents sipping it, while the roosters crow at 5am.
